The mayo helps keep the bread from getting soggy. The oregano, relish, banana peppers, and red wine vinegar all contribute to a balanced and peppy flavor. The meats, veggies, and cheese may not be overly flavorful on their own, but the toppings make up for it. Any sub from Jersey Mike's would taste better with these toppings.
